Here comes Peter Cottontail...
Happy Easter!
When I was younger, Easter was my favorite holiday. My mom got us the best baskets filled with candy, toys, and all kinds of goodies. We would put on our Sunday dresses and looked our best. Our Easter Sunday started with Church. The next best part was brunch. We traditionally went to The Red Lion hotel for a huge buffet brunch. I always loaded up my plate with Belgium waffles topped with strawberries and whipped cream. Yum!
Then we would come home to abundantly filled baskets and run around the yard and house hunting for Easter eggs. They would be filled with anything from pennies to dollars to jelly beans. I never really believed in the Easter bunny but my mom definitely made a great effort trying to make me and my sisters believe in him.
It’s times like these I especially miss my childhood. This year will be a little bit similar but not quite. Church in the morning then we’ll probably just make a nice brunch. I always really want to go to "Hop". Have you seen it? And maybe if I’m lucky I’ll even get a nice basket.

Happy Earth Day and happy Friday.
Today is a day to appreciate our beautiful Earth and be more aware of how to keep it clean. There are a million things to write about for Earth Day. Let’s start with 5 things “Purchase Green”…
1) Buy Recycled. Items made from paper and plastic are often made from recycled materials. You can also buy automotive parts, motor oil, and tires made from recycled products. Also look out for household furnishings and gardening tools made from recycled materials.
2) Buy in bulk or multi-packs. Buying more items at once reduces packaging waste. You can also buy items with packaging that can be reused or recycled. It can also be a lot cheaper.
3) Buy used. You can find authentic retro (or vintage) clothes, accessories, and other items at your local thrift store.
4) Reusable bags. Whether at the grocery store or department store, bring a reusable bag made from recycled materials with you. They have so many cute ones now and a ton of designs. And they’re super cheap! These are also great ways to give gifts rather than the traditional paper gift bag or wrapping paper.
5) Buy local. You probably already know this but instead of buying fruits and veggies and what not at the store that are often shipped internationally, go to the local farmer’s market or stand to get it. Last weekend, I bought 1 lb. of strawberries, 1 large onion, and 5 apples from the local market which cost me only $4.37!!! Such a better deal.

Naked Mexican Fiesta! Ole!
I wish I could say that’s how I finished off my weekend but instead it’s what I made for dinner. I was really craving some Mexican but 1) didn’t want to spend money going out and 2) didn’t want all the grease and fat that comes with it. So I took matters into my own hands and made my delicious Naked Mexican Fiesta.
Ingredients:
- Skinless chicken breast (I prefer thinly sliced)
- Chipotle pepper seasoning (however zesty you like it)
- Maggie’s All Natural Mild Salsa made w/Agave (or whichever kind you prefer)
- Shredded Mexican style cheese
- dollop of Fage 0% Plain Greek Yogurt
- 1 can unsalted yellow corn
- 1 can black beans
- brown rice
Season the chicken with the Chipotle Pepper then grill. Start with the brown rice and add ¼ cup of beans and corn on top, or however much you like, obviously. Sprinkle cheese, and then scoop a dollop of the Greek Yogurt on top. Place the seasoned and grilled chicken on top of yogurt then add a spoonful or so of salsa. Muy bien. Enjoy!!
This would go really well with a glass of Skinny Girl Margarita.

5 on Friday: Things to do
Unfortunately my Friday this week is not going to involve much fun and excitement, just lots of chores and things to get done.
1) Unpack. I still have to unpack all of my clothes from our trip to Kentucky. Packing and unpacking are both not fun to me.
2) Laundry. After I unpack, I have to wash all those clothes. But before that, I still have to put all my clean clothes away. I'm not sure why, but I will spend all day deep cleaning my house and do loads and loads of laundry but putting clean clothes away seems to be such a mission for me. They may sit in a basket for a few days but at least they're clean, right?
3) Homework. I have a 5-6 page paper due by Monday... hmmm... that is going to be the most difficult part. I have all the info ready, but starting that paper is almost painful for me right now.
4) Food. After being gone for a week, I came home to a very empty kitchen. I will definitely need to refill my kitchen and pantry, but, I have to make sure not to go shopping on an empty stomach. That's the worst, you almost end up buying the entire store that way.
5) Sweat. Yes, sweat, hard. I haven't worked out in about a week and feel like mush. Yuck! I did, however, attend a whole new type of workout on Monday while I was in Kentucky. Danielle and I went to a Purre Barre class. Have you been yet ? It was very different that what I'm used to so I wasn't the best at it but my thighs felt it the next three days.
And last but not least, after I get all of my things done, I am just going to relax. Tonight will be a movie and poppy night as I kick my feet up and say Aahh....

After a long week of fun and excitement, I am back to reality now in Florida. I had such a fun time hanging out Chris and Danielle and playing with Ava. Keeneland was a blast too. I unfortunately wasn't so lucky at the races, but Jason was $200! Woohoo! Here's some pics from all the excitement...

5 on Friday: Weekend Excitement!!
(Yes, I know it's Thursday but I have to do it early this week since I'll be on the road all day tomorrow). It has been a very busy week for me, no time to even read other blogs. That makes me a tad bit upset. But, I have been busy for a good reason. Today’s five are the 5 things I’m super excited about for this weekend:
1) No work tomorrow. Although I really don’t mind working your standard 40 hour week, working only 4 days makes a huge difference. It makes the week fly by and gives you more to look forward to. Plus, in that one extra day, you can get a lot more done during business hours.
2) Road Trip! My bf, Lola, and I will be road-tripping it 12 hours to The Bluegrass State (Kentucky that is). As much as I love road trips though, sitting in a car for 12 hours might drive me crazy. I’m excited to see the scenery and maybe stop at some interesting restaurants on the way.
3) Hangin’ out with my BFF. We are going to visit my BFF/sister from another mister and her hubby. The trip is long past due that’s for sure. I have spent the week scrambling around for last minute items and can’t wait to laugh like old times. There’s one thing my BFF, Danielle, and I have is LOTS and LOTS of ridiculously fun/insane memories. I can’t wait to make more this weekend.
4) Going to the Derby. I’ve been to horse races before but not as glamorous as the ones in KY. It’s going to be fun and exciting to get dressed up and see everyone in their big fancy hats. Most importantly, the horse I pick better win.
5) My ANFI week off. What the hell is ANFI you ask? Associate in National Flood Insurance. That’s what I get to put next to my name at work now. After months and months of studying and two 2-hour tests, I passed and am now an ANFI. I get a week off and am using it next week. It will be soooo nice to get stuff done around the house, catch up on sleep, and just relax.

5 on Friday
(No, not “5 on it” or a $5 foot-long, just 5 things) Today, I am going to share 5 facts about me to let my fellow bloggers know me a little better. My bloggy buddy, Brittany , did this previously as well. I am going to start “5 on Friday” and today I will begin with sharing 5 about me. Here goes…
1) I lived in Saudi Arabia for 2 1/2 years of my childhood. Weird right? My father got a job oversees and my family moved there when I was 3. It sounds crazy and fabricated now that I’m an adult but it’s true. It was a great time in my life though. My family and I got to see and do amazing things. My sisters rode a camel; I got spit on by one. We lived on an international compound and our neighbors were everything from English to Dutch to Turkish.
2) I have been to 4 continents. (Other than North America) I don’t say this to brag, just to share. I have had the privilege of visiting South America, Africa, Europe, and Asia. After we lived overseas, my family took an extended vacation and went to multiple countries. We went everywhere from Egypt, Italy, Turkey, Greece, France, Thailand… I really wish I had been a little older so I could really remember it all and take it all in better. In 2004, my sister and I went to visit my other sister in Ecuador. That was interesting. Definitely more of a field trip rather than a vacation. Beautiful place though. I feel that having seen so many different places and cultures at such a young age that it made me a very open-minded person and worldly. It also prompted my passion for travel. My dream job would be to travel and write about it. Know anyone who’s hiring???
3) I can eat poppy and ice cream till I burst. I’m not sure how it started by my love for popcorn and ice cream only gets worse as I get older. There’s just something about poppy, as I like to call it, which is very comforting to me. Having that warm bowl of crunchy pieces pop into my mouth one by one can make any movie or TV show worth watching. I don’t like the buttery stuff though. I started making my own poppy stove top style so I can control the amount of salt and/or butter added, along with the serving size. This always keeps the microwave radiation away. And ice cream, who doesn’t love it? Well, oddly enough my sister actually doesn’t like it… Lately it’s been frozen yogurt but either one are DEE-LISH! I hate chocolate ice cream though. I prefer strawberry cheesecake, mint chocolate chip, or rainbow sherbet. Yum!
4) I love Aladdin. Yes, Prince Ali, marvelous he, Ali Ababwah. I absolutely love the Disney movie Aladdin. I could watch it any time or place. I used to have a lot of Barbie’s and usually instead of Ken my Barbie would be dating Aladdin. He had better hair and abs anyway. I know every word to every song. Oddly enough though, I have wanted to be Jasmine for every Halloween but never have. I think I have just always been too self-conscious to wear her real outfit. Maybe next year… The Lion King is #2 on my Disney list.
5) I have a mild case of OCD. I am a deep believer that everything as a place. Whether it’s a toothbrush or a pen, socks or condiments, there’s a particular place for it. I can’t stand when things are just left out lying around or if something is put on the first shelf in the fridge. Although you wouldn’t know that from looking at my house right now, but it truly drives me insane. I drill it into my bf’s head daily (he would call this nagging) to put *fill in the blank* back where it belongs. It really is not that difficult.
Well bloggies, that’s my 5 for this Friday. I hope I didn’t bore anyone with it.

Did anyone else get slapped in the face this morning by April? I know I did. Wasn’t yesterday just March 1st? Man, time flies. I’m excited for April though. I am going to visit my BFF next week in Kentucky and then my pregnant sister will be here to visit me. Pregnant with twins too I must add. Yippee! And don’t forget Easter. As a kid I loved Easter. F*** the birds, I'm angry!
Ugh! Those damn birds think they're angry? Not compared to me. My work computer decided to go comatose on me this morning. I lost pretty much everything. Yes, I should have saved it all on the network drive but sometimes you just forget when used daily. The desktop is right now.

Spring has sprung!
Apparently I missed the actual day spring sprung, but better late than never. I really enjoy spring. Although spring seems to hate me as it tortures me annually with its abundance of pollen and endless other allergies, but it sure is pretty. The colors start to shine through as the snow melts away. The flowers bloom and the bees buzz. And that also means summer is right around the corner. There are such fun happenings during spring- Easter, Mother’s day, Memorial Day- all fun festivities.
As I sadly part ways with my winter boots, I am just as excited for cute sandals and pretty toes. I kicked off my colorful polish season with an Easter pastel, Gum Drop, on my toes last night. I love this polish and can’t wait to paint my finger nails too because it’s scented. (Warning: Do not use if you are a constant nail biter. You may chew off fingers.) I also have the Orange Pop. They are D-Lish. I added a cute purple flower gem too for a better hint of spring. (Sorry for the ugly toe shot, I hate all feet but just wanted you to get the full picture).

I can’t wait to get cute sandals to slip my feet into and let me toes feel the warmth of the sun. I haven't been shopping yet but I have gotten a sneak peak online and lots of ideas such as these esperdrilles from Aldo and Nordstom:

Breakfast- the most imporant meal of the day.
Not to keep boring you with my fitness/diet news but blogging about it is all part of my routine, plus its very therapeutic for me.
I've been getting bored with my gym routine lately. Leg day, back day, blah blah blah. So last night I took part in my gym's Total Body Sculpting class. And I loved it. It kicked my a**. I am sore today and it's a great feeling. I realized that my niche is classes b/c there's so much motivation. You don't want to be the only person not getting it so you have to keep up. Although I do enjoy doing free weights or machines on some days, I don't always have the mind set for it. Mind over matter right? I'll now be doing the sculpting classes 2-3 times a week and cardio the rest.
I went to bed early last night after my workout and woke up feeling refreshed. I had my power smoothie for breakfast. Besides oatmeal or overnight oats, smoothies are my breakfast faves.
My ingredients include:
1 scoop protein powder
1/4 c. oats
1/4 c. Almond or coconut milk
1/4 c. Greek yogurt
1 tbs. milled Flax seed
4-5 fresh strawberries
I've been getting bored with my gym routine lately. Leg day, back day, blah blah blah. So last night I took part in my gym's Total Body Sculpting class. And I loved it. It kicked my a**. Did the early bird catch the worm?
Yep, sure did. With the help of my lovely new alarm clock, I was up before the sun this morning and on my treadmill. I didn't get up right away but I did do a good solid mile. I feel better already.
I also had my delicious bowl of overnight oats for breakfast. I'm back on track and off to a good start. Now, I just need to be as productive throughout the entire day as I was this morning.

Sky rockets in flight, afternoon delight...
Get your mind out of the guuter. I'm talking about food here! My current foodie obsession are Lara Bars. These are the perfect grab-n-go's for breakfast or for a mid afternoon snack. They have the best flavors and are all natural too. I've completely changed the way I eat so if I can find something delicious and healthy, I'm all about it.
Although they are a little pricey ($1.69/bar), they are my favorites. When I'm lucky, I can find them on sale for 4 for $5 or so, either way, I love them. I go to lunch around 11 am everyday so by 3 pm I'm usually starving. A Lara Bar and an apple will keep me going for the rest of the day until the gym.
I'm not trying to sound like a commercial I just have to share my love for the bars. Enjoy!

Early bird gets the worm.
It's true. I think if I really were an early bird then I would get the worm. Mmm, protein. My recent goal has been to be more of an morning person. Hitting snooze 13 times for an hour is only making it worse. Think about it; that hour you are wasting hitting snooze, you could be sleeping soundly or up and being productive. I love sleep as much as the next guy and it is without a doubt vital for your body, mind, and spirit, but going to bed a little earlier and getting up even earlier would really be a major advantage.
I just bought this fancy new alarm clock from Brookstone to help get me up. (Not the most attractive accessory and a little pricey). Waking up to a dark room and my cozied up little puppy is a recipe for disaster. There's no hope that way. So, with the help of my new alarm clock, I am going to be waking up bright eyed and bushy tailed. (I say I am going to because I'm determined to make it happen). My main goal is to get my workouts done in the am, that way, I can even do some two-a-days. Summer is knocking at my front door right now and I am not ready to answer yet.

Excuse me... Where's my motivation?
Not my motivation to get into character but to get into shape. Anyone else having this same problem? I am probably annoying at this point as I continue on with my lack of motivation to run and run again. Any advice? Anything? I do amazing one week- get up at 6 am and run; 45 mins of cardio 4 days a week; eat only lean meats and veggies- then the next week, its almost as if I don't even move and only seem to be able to consume junk. What gives?
I'm about to hire a drill sargent or maybe put in a call to Jillian Michaels. Does she do house calls? I would probably get my run on just by running away from her. She's a little scary, but hey, that's the point I am at right now.
