Dear Time...
Why are you not on my side? I think it is true what they say, time really does go by so much quicker as you get older. And older I will be next week. I will be turning the big 2-6. I'm not too happy about it either. 25 I think is the perfect age so I think I might just stay here for another year....
I have obviously been far too behind on my blogs. Lots of fun has passed. I had a picturesque Floridian 4th of July weekend. We went fishing, swimming, grilled, and floated down the Rainbow River all day.
But the biggest news is that my sisters' twin babies finally came home yesterday. After a month in the hospital, Baby Lance and Sophia are home with their family. I cannot wait to go see them!! So precious...

5 on Friday: Father's Day
Yeah, 5 on Friday is back! My Friday’s just haven’t felt completed lately.
I already celebrated Father’s Day with my day this year. We had such an awesome day starting with 18 holes of golf. Then we had lunch at a little sports bar with some 22 oz beers to cool off. After lunch, we played a game of pool which he was impressively good at. Then hit a bucket of balls and the driving range and topped it all off with a delicious ice cream cone. Not too bad for an old guy.
That was my gift to him since he’s the guy who has everything so it’s very difficult to buy him something other than what he always gets (books, golf shirts, etc…).
But I did come across some great ideas online:
1) Magnetic Wristband. I think this is genius! When dad’s hanging up a picture or shelf or whatever, instead of having to hold nails or screws in his mouth or worry about dropping them, they stick right here to his wrist.
2) Trunk-It golf gear set. For the golfer, rather than throwing his shoes in the trunk or looking around for the sunscreen, he can keep it all organized in this trunk set.
3) Handy man BBQ grill set. You never know when day may have to suddenly fix something. With these tool/grill pieces he'll be ready for anything.
4) Nike dri-fit golf tee. My dad lives in these shirts. They are the perfect shirts for any activity. They wick up the moisture and keep you cool.
5) Watch. One can never have enough watches. Be it a leather, gold, or rubber watch, you can't go wrong with this gift. I love this Kenneth Cole watch from Nordstrom.com.
For dad's like mine, just spending the day together was great. Take him out fishing or even to see a movie. Just be sure to tell him you love him and that he's great.

Man...I finally found a day to dust off the ol' laptop and reunite with the world of blogging. My how I've missed you. So much has happened in the past couple weeks.
For Memorial Day weekend, I went back to Seattle to visit my sisters. We also had a baby shower for my oldest sister, Brooke. She is having twins! A boy and a girl! So blessed. Me and my sister Lauren made lemon and lime cupcakes that we so delish.
I also got to hang out with my little nephew, Isaiah, who is 7 months now. He has the best personality and is the cutest. It was so great being there for the weekend with my sisters and family. I miss them every day.
Now for the big news... on Monday, June 13th, the twins came! They were 9 weeks early so they will be in the NICU for 9 weeks but they are healthy and strong and HERE! We luckily had the baby shower just in time. I am a very, very proud auntie of 3 now. It's so crazy that in 1 year, my family has been blessed with 3 new little lives. I am counting the days until I get to go back and visit all of them.

5 on Friday: Dooms Day
According to Harold Camping tomorrow, May 21st, is supposed to be the end of the world. Well, if that’s the case then I highly suggest we all go out with a bang. It may be short notice to some but there’s plenty of time to live out the last hours of your life to the fullest.
5 Things to Do before the World Ends:
1) Skydive: This adrenaline rush is top on my list. To be able to get the nerve to jump out of a plane 10,000 feet up in the air sounds like the biggest thrill. I think this would be an amazing moment to actually be able to fly.
2) Run a marathon: This may not be a big deal to many but it is still on my bucket list. Every year I tell myself I am going to run a marathon, no matter the length. But every year time passes and I never do it. With only a day left, I better go get my Re-Zigs on.
3) Cliff dive in Hawaii: Have you ever seen those extreme cliff divers who are hundreds of feet up and ever so gracefully dive head first into the beautiful blue ocean? Well, that’s not exactly what I want to do but does paint a nice picture. Rather, I want to go back to Hawaii, backpack through the luscious forest to find a breathtaking waterfall and jump off of it.
4) Shopping spree: Although I do minor ones a bit too often, if the world was going to really end, then I would go all out. I would go to Italy, and Paris, and New York buying anything and everything I ever wanted. Whether it be clothes, or jewelry or even more puppies I would buy it all with ZERO shoppers’ remorse.
5) Loved ones: And most importantly, if the world was actually going to end, I would call each and everyone loved one telling them how much they mean to me.
This is just a quit list of the things on my bucket list. So, if there really is such thing as “dooms day” then I hope everyone goes out and enjoys themselves to the max this weekend. Be sure to tell the people in your life what they mean to you and even splurge a little.

Guitless dessert... Opa!
Remember when you were a kid on a hot summer day and nothing was more satisfying than an ice cold Popsicle? Unfortunately, as adults those summer days are a bit different now seeing as though we don't get to spend every day running through the sprinklers and up and down the slip-n-slide. Nor do we have that speedy metabolism to be able to eat all of those delicious popsicles (not most of us at least). But good news people!
As much as I try to save the desserts and goodies for the weekend, sometimes you just need that something after dinner to feel satisfied. Drum roll please.... Yasso frozen Greek Yogurt bars!! Love. Love. Love.
These have become my newest and most favorite after dinner treat. I've attempted to make my own frozen Greek yogurt but it was a complete bust. These yummy bars have only 70 calories and have 6 grams of protein plus they are fat-free and gluten-free.

Viva Italia!
It was one year ago today I arrived in the magnificent city of Rome for a 10 day journey throughout Italy. My parents and I took the long and much anticipated flight from New York to Rome to being our Italian expedition. We started in Rome not missing a single museum or monument. There was an overwhelming feeling of contentment right from the start. Wanting to jump right in, we sat street side at a café in the center of Piazza Navone while enjoying cold glasses of Peroni and snacking on some breadsticks. This is the life.
It is obvious how much Italians enjoy each and every day. The vibe is so relaxed and stress-free. People are on their cell phones laughing rather than yelling or fighting. No one is in a rush either. Meals are enjoyed bite by bite and stories shared while taking the time not to miss a beat. Couples are strolling along hand in hand of all ages. Kids are running and playing without a worry in the world.
The first night while lying in my hotel bed, there was sounds of drunken Italian men singing in harmony together as they made their way down the cobblestone streets. I already felt at home.
We spent 4 days in Rome absorbing as much culture and history as we could, and drinking as much wine on the way as well.
From there we went Sorrento, Capri, Venice, Florence, and Angera where my mother’s side of the family originates. Each place was a world of its own. Venice was magnificent, Sorrento had beautiful vistas and Angera had wistfulness.
Gelato to gnocchi, the food was amazing from street cars to sidewalk restaurants. It was by far my favorite vacation yet and I can’t wait to go back.

Yes, I'm early but it's never too early to prep and get started. I’m not Mexican but I certainly enjoy partaking in their Independence Day and festivities. If I didn’t have to be at work, I would be celebrating all day. I would dust off the ol’ giant sombrero and be dancing around with my little Mexican rat (aka Lola my Chihuahua) to a mariachi band. There’d be no waiting for happy hour because it would last all day.
A little bit of ice, some fresh berries, and some Jose going smoothly down my throat would be a great way to kick start the fun. (Jose Cuervo, that is).

5 on Friday: Royalty
I was torn today for what this “5 on Friday” should be, but after watching the Royal Wedding, I feel it’s only appropriate to honor it. Today will be the top 5 things I loved about the wedding.
1) Kate. How beautiful and classy did she look? Although I’ve heard around the water cooler from some that they weren’t impressed with her gown, I on the other hand, thought it was gorgeous. Very sophisticated. She has strict guidelines to follow so for the occasion, I was impressed. And, I must say, I love that she’s a brunette.
2) Hats. Some of the women’s hats were so pretty, others so annoying to even look at. I feel like some of the hats aren’t even hats, more like head garnishes. Did you see Beatrice’s?
3) Royalty. Here in America the closest we have to royalty is Obama and Michelle, to say the least. Or Brad and Angelina. Real royalty continues to amaze though. As modern as our world is now, royalty remains traditional in their ways and values. Very respectable.
4) The wedding party. Who agrees that Pippa and Harry should be the next to hook up? Pippa is gorgeous and looked great as Kate’s Maid of Honor. And Harry, in my opinion, is the cuter one. Hmm… maybe something will happen at the after party.
5) England. I went to England when I was just a little girl and remember standing in front of the palace with my sisters staring through the gate in awe. At such a young age, I wasn’t able to grasp the significance of it but now knowing that I was right there is pretty awesome. I still think of England as being somewhat of a magical place with so much history to it. I can’t wait to go back and visit again.
Watching the royal wedding kind of got me in the wedding spirit. I have to be honest I started my morning doing a little online window shopping for rings and dresses. I should probably get engaged first though. Nothing wrong with a little bit of day dreaming about your wedding, every girl does it. Happy Friday to all!

Happy Easter!
When I was younger, Easter was my favorite holiday. My mom got us the best baskets filled with candy, toys, and all kinds of goodies. We would put on our Sunday dresses and looked our best. Our Easter Sunday started with Church. The next best part was brunch. We traditionally went to The Red Lion hotel for a huge buffet brunch. I always loaded up my plate with Belgium waffles topped with strawberries and whipped cream. Yum!
Then we would come home to abundantly filled baskets and run around the yard and house hunting for Easter eggs. They would be filled with anything from pennies to dollars to jelly beans. I never really believed in the Easter bunny but my mom definitely made a great effort trying to make me and my sisters believe in him.
It’s times like these I especially miss my childhood. This year will be a little bit similar but not quite. Church in the morning then we’ll probably just make a nice brunch. I always really want to go to "Hop". Have you seen it? And maybe if I’m lucky I’ll even get a nice basket.

Happy Earth Day and happy Friday.
Today is a day to appreciate our beautiful Earth and be more aware of how to keep it clean. There are a million things to write about for Earth Day. Let’s start with 5 things “Purchase Green”…
1) Buy Recycled. Items made from paper and plastic are often made from recycled materials. You can also buy automotive parts, motor oil, and tires made from recycled products. Also look out for household furnishings and gardening tools made from recycled materials.
2) Buy in bulk or multi-packs. Buying more items at once reduces packaging waste. You can also buy items with packaging that can be reused or recycled. It can also be a lot cheaper.
3) Buy used. You can find authentic retro (or vintage) clothes, accessories, and other items at your local thrift store.
4) Reusable bags. Whether at the grocery store or department store, bring a reusable bag made from recycled materials with you. They have so many cute ones now and a ton of designs. And they’re super cheap! These are also great ways to give gifts rather than the traditional paper gift bag or wrapping paper.
5) Buy local. You probably already know this but instead of buying fruits and veggies and what not at the store that are often shipped internationally, go to the local farmer’s market or stand to get it. Last weekend, I bought 1 lb. of strawberries, 1 large onion, and 5 apples from the local market which cost me only $4.37!!! Such a better deal.

Today is a day to appreciate our beautiful Earth and be more aware of how to keep it clean. There are a million things to write about for Earth Day. Let’s start with 5 things “Purchase Green”…
1) Buy Recycled. Items made from paper and plastic are often made from recycled materials. You can also buy automotive parts, motor oil, and tires made from recycled products. Also look out for household furnishings and gardening tools made from recycled materials.
2) Buy in bulk or multi-packs. Buying more items at once reduces packaging waste. You can also buy items with packaging that can be reused or recycled. It can also be a lot cheaper.
3) Buy used. You can find authentic retro (or vintage) clothes, accessories, and other items at your local thrift store.
4) Reusable bags. Whether at the grocery store or department store, bring a reusable bag made from recycled materials with you. They have so many cute ones now and a ton of designs. And they’re super cheap! These are also great ways to give gifts rather than the traditional paper gift bag or wrapping paper.

Naked Mexican Fiesta! Ole!
I wish I could say that’s how I finished off my weekend but instead it’s what I made for dinner. I was really craving some Mexican but 1) didn’t want to spend money going out and 2) didn’t want all the grease and fat that comes with it. So I took matters into my own hands and made my delicious Naked Mexican Fiesta.
Ingredients:
- Skinless chicken breast (I prefer thinly sliced)
- Chipotle pepper seasoning (however zesty you like it)
- Maggie’s All Natural Mild Salsa made w/Agave (or whichever kind you prefer)
- Shredded Mexican style cheese
- dollop of Fage 0% Plain Greek Yogurt
- 1 can unsalted yellow corn
- 1 can black beans
- brown rice
Season the chicken with the Chipotle Pepper then grill. Start with the brown rice and add ¼ cup of beans and corn on top, or however much you like, obviously. Sprinkle cheese, and then scoop a dollop of the Greek Yogurt on top. Place the seasoned and grilled chicken on top of yogurt then add a spoonful or so of salsa. Muy bien. Enjoy!!
This would go really well with a glass of Skinny Girl Margarita.

5 on Friday: Things to do
Unfortunately my Friday this week is not going to involve much fun and excitement, just lots of chores and things to get done.
1) Unpack. I still have to unpack all of my clothes from our trip to Kentucky. Packing and unpacking are both not fun to me.
2) Laundry. After I unpack, I have to wash all those clothes. But before that, I still have to put all my clean clothes away. I'm not sure why, but I will spend all day deep cleaning my house and do loads and loads of laundry but putting clean clothes away seems to be such a mission for me. They may sit in a basket for a few days but at least they're clean, right?
3) Homework. I have a 5-6 page paper due by Monday... hmmm... that is going to be the most difficult part. I have all the info ready, but starting that paper is almost painful for me right now.
4) Food. After being gone for a week, I came home to a very empty kitchen. I will definitely need to refill my kitchen and pantry, but, I have to make sure not to go shopping on an empty stomach. That's the worst, you almost end up buying the entire store that way.
5) Sweat. Yes, sweat, hard. I haven't worked out in about a week and feel like mush. Yuck! I did, however, attend a whole new type of workout on Monday while I was in Kentucky. Danielle and I went to a Purre Barre class. Have you been yet ? It was very different that what I'm used to so I wasn't the best at it but my thighs felt it the next three days.
And last but not least, after I get all of my things done, I am just going to relax. Tonight will be a movie and poppy night as I kick my feet up and say Aahh....

Weekend recap
After a long week of fun and excitement, I am back to reality now in Florida. I had such a fun time hanging out Chris and Danielle and playing with Ava. Keeneland was a blast too. I unfortunately wasn't so lucky at the races, but Jason was $200! Woohoo! Here's some pics from all the excitement...
